Grilled sardines with aromatic herbs

Ingredients
- 20 small gutted sardines
- 4 sprigs fresh coriander
- 4 sprigs flat-leaf parsley
- 1 teaspoon coriander seeds
- 1 tsp. cumin
- 1 tbsp pine nuts
- 2 tbsp. olive oil
- ½ green bird's eye chilli (optional)
- 1 tsp lemon juice
- salt and pepper
Preparation
1. Finely chop the herbs and chilli.
2. Grind the cumin and coriander seeds in a mortar. Add the pine nuts, chilli and herbs and grind again. Finally, add a tablespoon of oil and the lemon juice and grind one last time to obtain a paste.
3. Fill the sardines with the stuffing.
4. Heat your griddle over a fairly high heat. Drizzle with oil and cook the sardines on both sides.
