Hawaiian shrimp

Ingredients
- 16 large shrimps
- 4 slices fresh pineapple
- 1 red pepper 1 red onion
- 1 clove of garlic
- 1/2 bird's eye chilli (optional)
- 1 tbsp. liquid honey
- 1 tbsp. lime
- 1/2 tsp. lime zest
- 4 sprigs parsley or coriander, leaves removed
- 2 tbsp. sunflower oil
- salt and pepper
Preparation
1. Heat your griddle over a fairly high heat.
2. Peel the prawns, leaving the head and the last part of the tail.
3. Cut the pineapple flesh into cubes. Halve the pepper, remove the seeds and cut into cubes. Peel the onion and garlic, remove the garlic germ and dice finely. Cut the chilli into very thin slices.
4. Pour 1 tbsp. of oil onto one side of the griddle and fry the pineapple, pepper, onion, garlic and chilli. Pour the remaining oil over the other side of the griddle and fry the prawns until they start to brown.
5. When the prawns and vegetables are golden brown, mix everything together, drizzle with the honey and lemon juice, season with salt and pepper and mix well.
6. Serve on plates and finish with a sprinkling of parsley or coriander leaves and lime zest.
