Saffron clams

Saffron clams

Serves 4

Cooking time: 6 to 8 minutes

 

Ingredients

  • 1 kg clams
  • 1 sprig rosemary
  • 4 bay leaves
  • 4 unpeeled garlic cloves (in their skins)
  • 20cl dry white wine
  • ¼ teaspoon dried red chili flakes
  • Pinch of saffron threads

 

Preparation

  1. In an aluminum tray, combine the clams, rosemary, bay leaves, garlic cloves, white wine, red chili flakes, and saffron. Mix and seal the tray.
  2. Place it on the griddle over high heat and cook for 6-8 minutes.
  3. Transfer the clams to plates, pour the juices over, and serve immediately.

 

Tip

Omit the chili if you prefer a milder dish!
