Saffron clams

Serves 4
Preparation time: 5 minutes
Cooking time: 6 to 8 minutes
Ingredients
- 1 kg clams
- 1 sprig rosemary
- 4 bay leaves
- 4 unpeeled garlic cloves (in their skins)
- 20cl dry white wine
- ¼ teaspoon dried red chili flakes
- Pinch of saffron threads
Preparation
- In an aluminum tray, combine the clams, rosemary, bay leaves, garlic cloves, white wine, red chili flakes, and saffron. Mix and seal the tray.
- Place it on the griddle over high heat and cook for 6-8 minutes.
- Transfer the clams to plates, pour the juices over, and serve immediately.
Tip
Omit the chili if you prefer a milder dish!
