Mini skewers of duck with apricots

Serves : 4

Cooking time : 10 minutes

 

Ingredients

  • 2 duck breasts
  • 16 dried apricots
  • 4 sprigs oregano, leaves removed
  • 2 tbsp. liquid honey
  • A few pinches of Espelette pepper
  • 40cl hot tea
  • Salt

 

Preparation

1. Soak the apricots in the tea for at least 2 hours. Don't hesitate to soak them the day before, they will taste even better.
2. Heat the griddle over a high heat.
3. Cut the duck breasts into 16 cubes.
4. Stick an apricot on each spike. Then prick a piece of duck breast with the skin side at the end of the prick. Place a few oregano leaves between the apricots and the pieces of duck.
5. Brush the skewers with the honey and season with salt. Place them skin-side down on the griddle and allow to brown. Then brown on all sides.
6. Finish by sprinkling the Espelette chilli over the kebabs.
