Skewers of scallops and mango passion fruit

Ingredients
- 16 scallops with their coral
- 1 mango
- 2 passion fruits
- 1 tbsp. caster sugar
- 1 tbsp. lime
- sunflower oil
- 2 sprigs mint, leaves removed
- salt and pepper
Preparation
1. Peel the mango and cut into 12 cubes about 2cm square. Cut the rest of the mango into small cubes.
2. Empty the passion fruit into a small saucepan, add the lemon juice, sugar and 2 tbsp. water. Bring to the boil, reduce the heat and leave on the heat for three minutes. Strain the contents of the pan, empty into a bowl and add the mango pieces. You can add a few passion fruit seeds for a little crunch.
3. Heat the griddle over a high heat.
4. Stick the scallops and mango cubes onto skewers. Brush the skewers with oil and place them on the griddle. Brown on both sides. Turn off the griddle.
5. Place the skewers on a plate and season with salt and pepper.
6. Drizzle the plancha with oil and sauté the coral very quickly.
7. Serve the kebabs and coral, drizzle with a little passion fruit mango and finish with a sprinkling of mint leaves.
