Asian-style prawns

Ingredients
- 16 prawns
- 2 tbsp. nuoc mam
- 1 tbsp. lime juice
- 1 tbsp. brown sugar
- 1 clove garlic, crushed
- 1 red pepper, seeded and thinly sliced
- 1 green pepper, seeded and thinly sliced
- 1 onion, thinly sliced
- 1 bowl of bean sprouts
- 2 sprigs mint, leaves removed
- 2 sprigs coriander, leaves removed
- 1 tsp sesame oil
- 4 tbsp. coarsely chopped cashew nuts
- salt and pepper
Preparation
- Remove the shells from the prawns before threading each lengthways onto a skewer.
- In a bowl, mix the nuoc-mâm, lemon, brown sugar, garlic clove, salt and pepper.
- Reserve half the sauce, brush the prawns with the rest, then cook them on the griddle over a high heat for 2 to 3 minutes, turning them regularly, and set aside.
- Pour the peppers, onion and soya onto the griddle for 3 to 4 minutes, stirring regularly, add 2 tablespoons of sauce on top and cook for a further minute.
- Arrange the vegetables on each plate, add four prawn skewers with a drizzle of sesame oil and sprinkle with cashew nuts and mint and coriander leaves.
