Grilled Pineapple with Coconut Cream

Ingredients

  • 8 slices of fresh pineapple
  • 8 tbsp granulated sugar
  • 5 cl rum
  • 10g melted coconut oil
  • 10 cl coconut cream
  • 2 sprigs Thai basil

 

Instructions

  1. Preheat the plancha to high heat.
  2. Brush the pineapple slices with coconut oil and grill on both sides until golden brown.
  3. Sprinkle with half the sugar.
  4. Heat the rum in a small saucepan and flambé the pineapple.
  5. Serve the pineapple drizzled with coconut cream and topped with Thai basil.
