Potato and sweet potato fries

Ingredients
- 500g firm potatoes
- 500g sweet potatoes
- 6 tablespoons olive oil
- 2 tablespoons fleur de sel
- Curry or paprika to taste
For the mojo verde sauce:
- 50g fresh cilantro
- 2 cloves garlic
- 100g green bell pepper
- 2 tablespoons vinegar
- 8 tablespoons olive oil
- 1/2 teaspoon ground cumin
- A pinch of coarse salt
For the mojo rojo (spicy) sauce:
- 100g red bell pepper
- 1/4 teaspoon paprika
- 1/2 teaspoon cumin
- 8 tablespoons olive oil
- A pinch of coarse salt
Preparation
- Place all the ingredients for the desired sauce (verde or rojo) in a food processor and blend until smooth. Set aside. Wash the potatoes and sweet potatoes. Peel the sweet potatoes but not the regular potatoes. Cut them all into fries.
- Heat the griddle, arrange the fries on it, and drizzle with olive oil. Cook for 30 minutes, turning them regularly to brown on all sides.
- Season the fries with fleur de sel, paprika, or curry to taste, and serve with the mojo sauces.
