What is a gas griddle

A gas griddle is a flat cooking surface powered by propane gas or butane gas. Unlike traditional grills with barbecue grates, a griddle provides a smooth, solid surface - usually made of enameled cast iron or stainless steel - where food is cooked directly. This allows for even heat distribution, ideal for achieving perfect cooking results, whether you’re preparing steak, salmon, peppers, duck breast or even preparing delicate items like eggs and pancakes.

What is the difference between a gas griddle and a grill?

While both gas griddles and grills are popular for outdoor cooking, they differ significantly in design, functionality and health impact:

  • Cooking Surface: A gas BBQ grill uses open grates, which allow grease and meat juices like sausages, bacon lamb or pork to flow into a burner zone, producing smoky flavors. When these fats hit the hot coals, they can generate smoke containing potentially harmful compounds potentially hazardous to health. In contrast a gas griddle, features a solid enameled or cast iron plate that retains juices and avoids contact with the flame. Healthy cooking, avoids flare-up, and supports healthier grilling with flame control and adjustable temperature.
  • Type of Cooking: BBG grills allow you to cook only large pieces of meat or fish like rib of beef or poultry. However, gas griddles excel at mixed cooking – allowing you to prepare everything from king prawns and skewers to finely chopped vegetables and eggs. How to choose the right gas griddle?

Choosing the right gas griddle depends on several factors, including your cooking habits, the size of your outdoor space, and your budget. Here are some essential criteria to consider:

Cooking Surface Size

What cannot be cooked on a griddle?

While gas griddles are versatile enough for nearly all foods – beef, pork, vegetables, shellfish – some cooking styles, due to to the flat and dry cooking surface, are less compatible.

Foods requiring boiling or immersion

Ingredients like pasta, rice, dried beans, or soups require cooking in a liquid such as water, broth or milk.

A griddle cannot directly accommodate this type of preparation, but you can cook them in a pan placed on the griddle (similar to induction cooking).

Deep-fried foods

While shallow frying is possible on a griddle with a small amount of oil, proper deep frying - like making chips, doughnuts or tempura - requires precise temperature control and deep oil volumes. This is not achievable on a standard griddle, best suited to dedicated fryers.

Large cuts of whole meat

Items such as roasts, whole chickens or large joints of lamb need long, even cooking all the way through. A griddle applies high direct heat, which can overcook the outside while leaving the inside underdone. However, you can also grill a whole piece of meat or fish a la griddle, using the resting grid itself, and then continue stewing with the cooking bell.
